Hi, I’m Gabrielle Au, founder of Bunny Churros and a BSc Applied Physics graduate from HKUST. Entrepreneurship was never a sudden spark for me — it was something I grew up with. Watching my father build and run his own business shaped how I see the world: that with enough grit, creativity, and heart, you can create something meaningful from scratch. After graduation, I built my early career in the technology sector across marketing, operations, and digital strategy. But one trip to Spain crystallised a vision I’d long been nurturing: that truly world-class desserts shouldn’t be locked behind the doors of expensive restaurants. They should be joyful, accessible, and shared by everyone. That conviction became Bunny Churros. In 2023, my sister and I founded Hong Kong’s first Spanish churros × Italian gelato concept, deliberately setting up our first location in Kwai Fong — one of the city’s most local, community-rooted neighbourhoods — because that’s exactly who we built this for. The analytical rigour from HKUST, combined with a lifetime of watching entrepreneurship up close, continues to guide every decision — from product development to business expansion. Today, Bunny Churros operates across two locations, with a clear ambition to grow beyond Hong Kong. The mission stays the same: Love at First Bite. Happiness All Day and Night. 🐰
